Preventing Spoilage in Beer Fermentations

Bacterial infections during beer fermentations give rise to off-flavours. To redress this yeast strains have been constructed which have been shown to prevent bacterial spoilage of beer fermentations. This process have been patented by Ursula Bond et al. (United States Patent Application No.0120308538, Preventing Spoilage in AlcoholFermentations).
